Apologies for the misleading title but since we mainly eat chicken I thought of substituting the lamb in the Lamb curry recipe with chicken and making it for dinner tonight.
My mum’s side of the family comes from the Indian coast and being genetically obsessed with coconut, I used coconut milk instead of water for the gravy. The husband is not too keen on coconut – so let’s hope he doesn’t notice or read this blog before dinner!
We are going to have a friend home tonight and I will be serving this with rice, a tomato and sweet corn salad and some roasted aubergines (recipe to follow shortly)!
