Well, if you are a Bombay insider (note Bombay and not Mumbai – adding more credibility to my insider status) you will of course call this Anda Bhurji – or if you are really very cool – Baida Bhurji. This is very popular street food in the city and is also served in its quaint and slightly eccentric Parsee restaurants (Oh, how I miss Kayani with its distinctive “Don’t sit long time” sign on all the tables).
This quick, hearty and delicious dish can literally be made in seconds – okay 10 minutes. I deploy it at home when a) we have unexpected guests and our maxim of “Never Knowingly Undercatered” is in jeopardy or b) when I have loads of left overs for dinner this is used to fool the troops into thinking everything’s fresh.
My sister and I cooked this a lot when we lived in Bombay and it will always bring back memories of the Anda walla – or egg seller – on our street. One day when I went to buy some eggs there was an old Hindi song playing on his radio and both of us took 5 minutes off and sang the song to its entirety. Much embarrassment ensued when the song ended, we came back to our senses and realised that not a single egg was sold or bought.
Well, since you insist, here‘s the song. Ah, well – Hindi film songs, cricket and food – that’s what life is all about eh? Enjoy.
Egg Bhurji or scrambled eggs Indian style
Ingredients
- 1 tbs. oil (we use sunflower)
- 6 eggs
- 1 clove garlic (finely chopped)
- 1 onion (finely chopped)
- 2 tomatoes (finely chopped)
- 1 tsp. cumin seeds
- salt to taste
- coriander to garnish
Directions

Heat the oil in a pan | |

Add in the cumin seeds and wait till they sizzle | |
Step 3 | |
Add in the garlic and the onions and fry until brown | |
Step 4 | |
Add in the tomatoes and fry the mixture until the tomatoes have almost blended with the onions | |

Now, break the eggs one at a time into the mixture. Mix every egg yolk with a spatula as soon as the egg is broken into the mixture. Add salt | |

Now cook the mixture until the eggs are cooked | |
Step 7 | |
Warning! Make sure you don't over cook the eggs as the entire dish can become very dry when this happens | |
Step 8 | |
Garnish with coriander and eat with bread, chappatis or pitta bread. |
